Redshift is a tern in astronomy describing the lengthening of a lightwave as it moves away from us and explores the diverse expanse ofthe universe. Its the stretching of light, into longer, redder wavelengths signifying movement, speed, transformation and expansion. Our Redshift Red Carbonic is a study of that transformation. Made using carbonic maceration, a fermentation method where whole clusters of red grapes are sealed in a tank with carbon dioxide, this process triggers fermentation (Re:transformation) inside the grape berries themselves. The resulting wine is light in tannin, intensely aromatic, and bursting with bright, juicy fruit.

- Light on its feet but with a deeper pulse than the 2024 vintage. Redshift 2025 turns up the intensity while keeping its playful edge. This carbonic Sangiovese leans darker and more structured, opening with aromas of black cherry, ripe plum, and crushed rose petals, layered with hints of blood orange and a touch of baking spice. The palate shows more grip and presence, with fine tannins framing flavors of blackberry compote, pomegranate, black tea, and a savory note of dried oregano.
Still best served with a slight chill, this vintage brings enough structure to stand up to heartier fare. Think grilled lamb skewers, eggplant parmesan, or porchetta with crispy skin.
